Description Sevenhill was the first winery ever built in the Clare Valley and one of the oldest in Australia. Originally built and run by the Jesuit community here, with monks who had brought their winemaking knowledge and skills to the Clare Valley from their European homes. Today, the experienced and extremely talented winemaker Will Shields is ensuring the reputation of Sevenhill is soaring. The Clare Valley is a popular wine region, home to about 50 wineries and renowned for its cool climate wines, notably Riesling.
