Leading their winemaking is Miriam Gomez, who has worked at some of the world's top cellars, including £355-a-bottle Opus One. Aged well over a year in barrel, the rest in bottle, this fine red has dark plum, cassis, strawberry and cherry notes, rippled by the toasty vanilla of oak. Gloriously silky, it's a great choice with steak, grilled lamb, slow-cooked beef cheeks or richer vegan or vegetarian dishes.
