The deep limestone deposits created by coral and ancient sealife are now home to Australia's most important source of fossils and are classified as a World Heritage site. They also transfer this rich minerality to the grapes grown above them, giving this handcrafted Sauvignon Blanc a vibrant palate of summer fruits and citrus.
