Description The Cabalié name is probably best associated with our hot customer favourite, Cabalié rouge. But star winemaker Hervé Sabardeil is anything but a one trick pony. This is his rosé – ripe with crisp, elegant fruit and a tasty bite of lemony freshness. The original Cabalié is red, inspired by the thought that Roman soldiers would have once drunk wines from vines planted in the very same southern French soils that growers harvest from today. They may not have had the wherewithal to make rosés back then, but nowadays Parker-praised winemaker Hervé Sabardeil certainly does. This is the new release of his rosé and it’s likely to be as enthusiastically received as its sibling red. Hervé selected old-vine Grenache and Syrah to ensure lovely depth of spicy berry fruit, then harvested early to gain zippy freshness. It’s an aromatic pink with vibrant strawberry and grenadine flavours and a hint of pepper. Serve chilled on its own, with prawns, pan-seared salmon or a chicken and seafood paella.
