As Elena explained to John Lehmann in The Australian “I've always found that the Barossa (style), because of its fruit weight at the front and a lot of beautiful natural tannins at the back, it can leave a hollow middle,… this is where a little bit of American oak goes a long way. This is my little signature that I do. I never ever just have French oak with the Barossa, because just a touch of American oak in the middle goes a long, long way, it gives me chocolate flavours as well. The entire wine just feels generous - polished and generous - and that's really good Barossa for me.”
