For this black beauty, Hervé uses intense Shiraz and Grenache grapes grown on the craggy hillsides of France’s deep south – the Languedoc-Roussillon. Here, warm sunshine and cooling Mediterranean breezes help grapes ripen to perfection, bringing great freshness and flavour. Look up from the vines and you’ll see ancient castle ruins perched on rocky peaks – ancient strongholds that were once home to medieval Cathars who feared the evil god Rex Mundi (‘King of the World’). He corrupted the faithful with promises of earthly pleasures and the forbidden delights of mortal flesh. Look forward to plum and black cherry flavours, and a long finish.
