Leading their winemaking is Miriam Gomez, who has worked at some of the world's top cellars, including £355-a-bottle Opus One. Aged well over a year in barrel, the rest in bottle, this fine red has dark plum, cassis, strawberry and cherry notes, rippled by the toasty vanilla of oak. Gloriously silky, and it really partners well with fillet steak.
